"When making a new recipe, I find that reading a lot of the reviews is very helpful to determine how to get even better results. I used Cognac and let it boil down while stirring for at least 5 minutes as a few recommended. Reviewed Mashed Cauliflower and Cheese

"Immersion blender is the key here. The roasted garlic is terrific in this recipe. I just put 4 large bulbs of garlic in tinfoil and put them in the oven for about 25 minutes. The flavor is exciting, especially when you realize this is only cauliflower without any butter or oil. I did not have sharp cheddar cheese on hand so I used regular cheddar and it was still great. I think it would be even tastier with sharp cheddar! Cauliflower is one of the few vegetables low in oxalates to prevent kidney stones, so I will surely make this again. The texture is very much like potatoes. I agree with another person that it took much longer to cook than 8-10 minutes to completely soften."
