I have tried many different recipes for Blue Cheese dressing and this is by far the easiest and the VERY best!!! I will always make this one from now on. I love that you don't have to use buttermilk like a lot of recipes call for and end up throwing away all the unused portion. Next time I may also add dried dill as I found this is so delicious...

Immersion blender is the key here. The roasted garlic is terrific in this recipe. I just put 4 large bulbs of garlic in tinfoil and put them in the oven for about 25 minutes. The flavor is exciting, especially when you realize this is only cauliflower without any butter or oil. I did not have sharp cheddar cheese on hand so I used regular cheddar...
