So easy and so very good. Double or triple the olive oil mixture and roast other vegetables with the sweet potatoes. I used parsnips, carrots, onion and a little garlic powder. Added some broccoli and bell pepper about 20 minutes into the roasting process. I did not peel the sweet potatoes as there is so much good nutrition in the skins. I think...

I made this last week. Instead of wrestling with the squash with a knife, I just poked a few slits in it and baked at 375? for about an hour. Then sliced it in half and went from there. I'd never worked with spaghetti squash before and must say that the result was a nice surprise. I'll be making it a lot more often now."
