I usually don't comment on these recipes. This one I will. Heck, just brine the pork...we did a tenderloin. Baste it from the beginning...don't wait till its almost done. Served with Lady Peas and, to be honest, the gremolata seemed like a too much fennel..however, go for it. I did on a 2,000 Weber with a smoke box... I think it came out marvelous....

TART!! OMG make you pucker up. I tried the sauce....and knew it was WAY too lemony. So I cut it back with some chicken broth.
