Alton always does his homework. The only thing I add to this is fresh Serrano peppers and grind the Cumin Seeds fresh... This tastes great and has never let me down, even serving it to people who know good Guacamole!"

I am dry aging a porterhouse as I write this... I have done it once before and the result was the best steak I have ever eaten. Thank you Alton for revealing the secrets of proper aging of a fine cut of meat!
