Reviewed Winter Minestrone
"This soup is divine any time of year. The rosemary and cheese give it depth unlike any other minestrone I've tasted. The only thing is the 'prep' time is more like 1.5 hours ! I make a double batch every time because it is so much work preparing all the vegetables.
It's worth it though. "
