Reviewed Black Bean and Corn Salad

"I love recipes where ingredients called for are simple and what I happen to have on hand. I have to admit that I didn't have the snow peas, but I was able to use left over ears of corn I had in the fridge. Nice flavors, and picky boyfriend was surprised it was better than he expected."

Reviewed Chicken-Andouille Casserole

"To be fair, I didn't have several of the ingredients called for in this recipe. However, the recipe is a solid starting point to make a good meal.

I used boneless skinless chicken thighs, but next time will mix it up with breasts. Used 2% milk in place of the cream, but the recipe is already fatty enough, that we truly didn't miss it. My pic"

Reviewed Company Pot Roast

"Simplified the recipe a bit...halved everything except sauce and garlic.
Omitted cognac and tomatoes to suit fiance's taste and acid reflux. Used 1/2 cup red wine since that's all I had on hand. Threw in a can of cream of mushroom soup to make up a little of the volume. Used a bag of frozen leeks from Trader Joe's instead of fresh. After 3.5hrs of cooking, the vegetables mostly cooked down and produced a lot of liquid." Removed half and pureed it for sauce with a little bit of texture. Didn't need or miss the butter as it was already quite rich. Result was FANTASTIC. The extra "sauce" was used over egg noodles the next day. Don't omit the leeks! They add quite a bit to the flavor! "

Reviewed Pot Roast

"To be fair, I made some changes...
1) Added a couple of chopped carrots, celery stalks, and a bag of frozen leeks from Trader Joe's
2) Used my dutch oven and turned down the temp to 250 to keep at a simmer after the first hour.
Amazing flavors for such a simple recipe, but I have to say the leeks added a whole lot to it. All the vegetables were cooked down, and I pureed 1/2 to make a kind of sauce. I used the sauce over egg noodles the next night. Made for a very happy fiance...
