"Excellent recipe. I have a tomato vine at my house, and the tomatos never seem to ripen. This is the perfect way to use them. Having tried the recipe several times, I suggest, if it happens to be in your kitchen, using a small amount (1/2 teaspoon) of vital wheat gluten in the flour.

Reviewed "Instant" Pancake Mix

"Delicious recipe. The second time making it, I used 2 small eggs, and instead of buttermilk, I used peach kefir (a yogurt which is a bit like buttermilk). Therefore, this time I made 1/6 of the "mix" recipe. I then halved the amount of buttermilk, etc.

Instead of making up a mix, I simply did 1/3 of the mix the first time making the recipe. This makes enough for at least 4 hungry people. For two people, this was too much, so I simply halved the recipe again. (Be sure to have accurate 1/4,1/8 tsp measuring spoons, etc).

I will be using this recipe again. Thank you Alton.
