"This recipe was delicious. I left the nuts out because we are not big fans. But I didn't change anything else. LOVED it. I know I was leary about the sour cream but you can't tell it's even sour cream with all the fruit and jello. Tastes more like cream cheese. Will definately be making this again. ""
Reviewed Coconut Bundt Cake
"The cake was very good but I gave it four stars because it needs some adjustments and the cake stuck to my pan. Twice! Iv'e made lots of cakes but this one stuck no matter what I did. It's very moist and the taste is just right. Except for the glaze. I tried it the first time following the directions. The glaze was way to sweet. So I cut the powdered sugar to one cup. And used the remainder of coconut milk AND pineapple juice. I eyeballed it and tasted it until it was just right. I think next time I will add crused pineapple. Not sure what to say about the cake sticking to my pan twice. But the taste is well worth the "ugly" cake.
