Reviewed Crispy Sweetbreads with White Bean Ragout

I found some gorgeous fresh sweetbreads at whole foods this week so had to try this recipe. Soaked them in salt water for 3 hours, simmered in court bouillon for 30 minutes, pressed between plates and chilled for 2 hours,, then removed membranes and cleanes up....whew.....added fresh peas to beans.......very nice french bistro dish.....bit of work...

This is fantastic.. I used cubanella peppers and fresh pimentos. Make sure you do not reduce wine to dryness. Add a pat or two of butter, some lemon juice and swirl pan before adding pasta. I used homemade spinach spaghetti. Top with reggiano and fresh ground pepper....amazing. I also used fresh packed blue crab from costco. Highly recommended and...

These are fantastic. I used a double espresso from my Nespresso machine and increased flour by 2 tbsp to a total of 1/2 cup. Incredibly rich and delicious. Baking time was 12 min at 350. I used to shelf chocolate from whole foods and the richness was similar to flour less chocolate cake but better. Highly recommended! Batter will be firm once refr"
