Reviewed Mashed Potatoes

Great mashed potatoes! I used Yukon Gold since I couldn't find the specific kind called for in this recipe. Also, I used 1 cup heavy cream and 1 cup milk and that worked great. I think salting the water to cook the potatoes was a good idea and I didn't have to add any salt after that. Making these gave me the opportunity to use my recently bou"

Reviewed Italian Meatloaf

Aug 13, 2013 in Food Network Community Toolbox on FoodNetwork.com

The flavors in this meatloaf are a good alternative to typical meatloaf recipes - you can taste the difference that the fresh herbs and parmesan cheese make. I didn't have bread crumbs so I used quick oats instead and it worked well. Also, I made 1/3 of the recipe since the full amount seemed like a lot. Instead of putting the marinara sauce on"

Reviewed Grilled Zucchini Rolls with Herbs and Cheese

Jul 30, 2013 in Food Network Community Toolbox on FoodNetwork.com

This is a great, light appetizer. As another reviewer said, it didn't leave my guests so full that they had no appetite for the main course. I also added toasted walnuts and made a little more of the cheese mixture than is indicated in the recipe. A mandolin works well for getting the zucchini sliced thinly enough and keeping them uniform. All"

Reviewed Grilled Pineapple with Nutella

Jul 30, 2013 in Food Network Community Toolbox on FoodNetwork.com

This was easy to make and really delicious - the pineapple is so sweet and flavorful once grilled and the chocolate sauce combined with the mascarpone put it over the edge - delicious!"

Reviewed Lemon Yogurt Cake

May 21, 2013 in Food Network Community Toolbox on FoodNetwork.com

This cake is really delicious! I mistakenly added 1/3 cup lemon juice to the batter so it tasted pretty lemony but I have to admit that I liked it that way. Definitely worth a try either way!"

Reviewed Spinach and Ricotta Gnocchi With Quick Tomato Sauce

Aug 12, 2012 in Food Network Community Toolbox on FoodNetwork.com

I loved how this food tasted - it is wonderful! This tomato sauce is fantastic and easy to make, just takes some time to skin, seed and core the tomatoes. The gnocchi are delicious, too, and super light! A couple observations - I hung the ricotta in cheese cloth over night as directed but didn't have any liquid to show for my effort, but I used"

Reviewed Peach and Raspberry Crisp

Aug 12, 2012 in Food Network Community Toolbox on FoodNetwork.com

I agree with O. C. from CA - no need to sift through crisp recipes, this is the one! It is incredibly good! I used the fruit I had on hand (peaches, strawberries, blueberries) and it was perfect, but I bet you could use just about any fruit and it would turn out. When I was making the topping for the fruit it seemed like there would be too muc"

Reviewed Hummus For Real

Jun 7, 2012 in Food Network Community Toolbox on FoodNetwork.com

This recipe created the best hummus that I, personally, have ever made! I always coveted the smooth, silky quality of hummus I would order in Mediterranean restaurants and wanted to duplicate it at home. Mr. Brown's recipe made this possible and I believe it has to do with the slow-cooker process of preparing the chick peas. Thank you thank you!...

Reviewed Broiled Halibut with Ricotta-Pea Puree

Aug 16, 2011 in Food Network Community Toolbox on FoodNetwork.com

This dinner was fast and easy to prepare. I agree with another reviewer that the halibut perhaps could have used more smoked paprika and the peas a little more salt. But it looked beautiful and tasted light and pretty good. I really liked the red onions. Because of the way my oven broils the items in the center of the sheet received more heat...

Reviewed Holiday Salad

Dec 17, 2010 in Food Network Community Toolbox on FoodNetwork.com

This salad tasted terrific and looked awesome. I only used 1/2 to 2/3 of the dressing so I just saved the rest. Also, I think I could have used smaller portions of goat cheese. This is a substantial meal in itself so I think it would be great as a main course!
