About Me
I am a wife of almost 25 years and the mom of two incredible boys ages 8 and 13 who are busy with school activities, band and every sport under the sun. My husband insists on coaching all of their sport teams and my career in anesthesia is demanding of my time as well. All of this adds up to an organized chaos that not many friends or family members understand or can appreciate. My family loves it and it will be my memories for a lifetime when I am old and gray...oops, I am already getting gray! All of this adds up to my personal challenge to find or develop simple, yet absolutely delicious recipes to fix for my busy family. We have a few steadfast rules in our house pertaining to mealtime... 1. We always sit down to dinner as a family, 2. We always say a blessing over our meals and 3. We have the "take one bite and try it" rule for every new dish I make. It is really amazing how often one bite turns into a full serving and smiles. I do not believe you should "dumby down" recipes for your children's palette, but I don't go crazy with really exotic or super spicy dishes either. My favorite time in the kitchen is that thirty seconds after the blessing when there is complete silence...only the sounds of forks and knives clinking hungrily on the plates can be heard. I love to look around the table and see that look of satisfaction and "it was worth the wait" look on the faces of my hungry guys. That is when I know I have hit it out of the park! Mark it down mom, that dish is a definite repeat performance.
Favorite Foods
My favorite food to cook is EVERYTHING! My best day is a Saturday when I am not on call for anesthesia and I make a steaming cup of coffee in my Keurig, turn on the stereo that has all of my favorite Christmas (yes, Christmas even if it is the middle of August and is 110 degrees outside and here in southeast Kansas it has been like that over the past two summers) CDs lined up, roll up my sleeves, put on my corny striped chef's apron and cook like crazy allll day long. I love for my 3 guys to come upstairs out of the Man Cave and say "it smells soo good in here mom, what's for dinner?" They start guessing and go to the oven and turn on the light and start smiling saying that is my favorite and I get that around the waist hug from my 8 year old, a kiss on the top of my head from my ever growing 13 year old and a sweet kiss on the cheek from the love of my life. I get to watch them enjoy that meal later and my heart swells with pride and thankfulness that my mom had me stand on a chair and stir while she was cooking and let me make tiny pies in my play cookware that my dad always ate first. That is a PERFECT day and my favorite foods to cook. My personal favs to eat are anything pasta and my new found favorite is any oven- roasted vegetable. They are just too good for words.
