Reviewed The Italian Village Chicken Vesuvio Recipe

"I made this dish recently after trying many other recipes and it was excellent. I've had this dish at The Italian Village many times and am happy I'm able to recreate this at home. Thanks for the recipe!

Note: I made a couple of small changes to the recipe that appeal to my personal tastes. After chicken has been browned, I transfer it to a 1"

Reviewed Molasses Black Pepper Cure

"I used this method for curing a pork belly over 3 days. Flavor was OK, but did not permeate the meat as thoroughly as I would have expected. This may work very well for chops or a roast.""

Reviewed Saffron Risotto with Butternut Squash

"I made this recipe yesterday and followed the ingredient list and directions as stated. It was outstanding! This is the first time I've used one of Ina's recipes. Great depth of flavors and a very good use of squash. Next time I make the dish, I will cut the squash into smaller chunks (personal preference). Thanks for the recipe.""

About Me

I'm a self-taught cook and enjoy all kinds of cuisine.  I've been lucky to have traveled all over the world for my job and have had the opportunity to sample lots of different foods while traveling.

Favorite Foods

I love pasta and a perfectly made hamburger.  I will travel long distances for great dim sum.  I'm a big fan of the Diner's show because it highlights the incredibly varied cooking around the United States even though the host is kind of annoying.  I can't say I have a favorite restaurant, but if money is of no concern, then The Everest Room in Chicago may be one of the very best dining experiences a human being can have without breaking the law.
