We loved this recipe. I used alot more pancetta than it called for and next time we'll know to adjust the salt. There is a delicate balance between the sweetness of the squash, saltiness of the pancetta, floral note from saffron and creaminess of the risotto. I grew up eating fried okra and this is way better than what I used to have in restaurants! The breading is light and crispy and delicious. Make sure the oil comes back up to temp between batches or they won't be as light. "
