I agree with person who said it tasted like donuts. If any one plans to make this at least use the classic hard ladyfingers. The filling didn't have as much flavor as the classic custard and was definitely heavier.

I also used regular peanut butter, cut the peanuts down to 1 cup and increased the chocolate chunks ( from package) to 1 1/2 cups. No way you can get 60 cookies cut on diagonal. Mine were less than an inch in diameter. Came out very good."

So, a Hummingbird cake does have banana in it. Sorry, in my previous review I said it typically doesn't have it as an ingredient. I would reduce amount of bananas and the ginger/nutmeg. Fresh pineapple is the way to go if you can. It tastes so much different than canned.

From the reviews it sounded like a fabulous cake. Come on now people, you can't taste the fresh pineapple at all. Why even have it in there. The recipe was easy to make, though I made a few changes. Used only 1/4 tsp. cayenne and it still had a kick. I also used 1 1/2 sweet potatoes and 1/2c peanut butter. To finish it off I served lowfat sour cream on the side. I held off using any cream in the soup for the calorie and fat, but I know that it would have given a richness to the soup.
