I bought a 5 gallon paint bucket with lid that I keep just for this purpose. I put half of the brine in, then the turkey, and rest of brine. I have a fridge in garage so I have plenty of room, but if we are in a cold spell, I can store him in back hall.

I've been cooking the turkey for as long as I can remember. I had never done the brining. After I saw this episode, I decided I would try it. I have used this recipe ever since. The only difference is I use a piece of peeled fresh ginger with a little more brown sugar as I don't use candied ginger in any other recipe. It is the best turkey ever....

Alton Brown scores another hit at our house. The recipe was easy to follow and the results were very tasty. My husband has been requesting this dish for some time and he cleaned his plate in short shrift.And I will certainly make it again
