"We love this healthy snack. We've made it several times and learned a few things.

I soak the peas longer than overnight. Check to see that they are completely soft, not al dente. Then I marinate them for atleast an hour in the mustard/oil/vinegar so they pick up some flavor. There's only two of us, so I make 1/2 lb, but still use the same amount of mustard. I like salty snacks so in the last 15 mins, I sprinkle on some Kosher salt. We've also tried different spices and always come back to the Dijon flavor.

If you're peas are too hard, you can wait until they are completely cooled and place them in a plastic bag, sprinkle 1 tea of vinegar, shake and wait several hours for them to absorb the moisture. Too hard of peas means you've overcooked them. Don't go by the clock. In the last 15 mins, test the peas. You're looking for just a tiny bit of soft center, not hard rock. Also, my oven runs hot, so I back down the temp to 375F.
