I agree with you that this cake is lacking in moistness, which is a nice way of saying it's dry. Think the recipe is a good baseline, so I'm going to play with increasing cake flour/decreasing AP, and also going to use Thermopen to see when the cake gets to an internal temp of 210, rather than the poke it method.

This is a lovely delicate cake. Maybe too delicate. The problem is that even though I followed the directions precisely, the cake still stuck to the cake pans, so I ended up having to piece them together when I frosted them, etc. Sort of a pain. The chocolate frosting is spot-on though. If you want to make this cake, do yourself a favor; cut circles...

It's a good recipe. It's not ricotta, it's a farmer's cheese. 'Ricotta' means re-cooked, and traditionally it's made by recooking the whey after making mozzarella. That said, this is an easy recipe with a delicious end-product.

Edit: on further review, I have to give this the full five stars. Yeah, technically, it's not ricotta....
