This is one of the simplest, most delicious recipes I have ever made. I serve it with brown rice. Sometimes, I add fresh shrimp and voila -- a complete, easy weeknight meal that satisfies everyone at the table!

Reviewed Mushroom and Artichoke Stuffed Trout

This recipe is a wonderful basis for experiment. I omitted the artichoke hearts, replaced them with smoked oysters. Instead of using button mushrooms, I used white oyster mushrooms for a little bit of an earthier taste. I stuffed four trout that were caught the same day by my husband and our guests were in heaven!"
