Reviewed Baked Costa Rican-Style Tilapia with Pineapples, Black Beans and Rice

"I made this recipe for the first time last night. It was absolutely delicious. The rice was very flavorful, both sweet and tangy. There's really not much one can do to make tilapia very flavorful but we enjoyed it. As an experiment, I think I'll use boneless, skinless chicken breasts next time. Will definitely keep this recipe in my inventory. ""

Reviewed BBQ Chicken in Cornbread Cups

"In response to jyjoey, I found that the recipe prepared on Paula's show did not follow the printed recipe above. Instead of cutting out centers of muffins, she suggested pressing the end of a rounded appetizer knife into the centers while the muffins were still warm and had not been removed from the pan. Bobby used a rotisserie chicken purchased from the grocery store. These tips make the recipe much easier and faster to prepare. I will make the recipe for our next supper club appetizer but would like to see any changes in recipes appear in print. I cannot rely on my memory these days.
