About Me

I am a housewife of 34 years, 4 children 3 daughters and 1 son. I get inspired by cooking shows and websites. After cooking for over 34 years I look forward to new ideas. I cook almost all the time, sometimes large meals with leftovers we all eat. There are 5 of us in the house now one of our daughters has moved out. We have 2 refrigerators and one upright freezer. With lots of activity and the coming and going of a large family I appreciate the encouragement of cooking shows and websites.  Looking forward to all I find in the future. Vickie

Favorite Foods

I am famous here at home with my Chicken Surprise. It is leftover chicken ( roasted, baked, grilled, etc.) and pasta or rice. It has grown from a can of cream soup ( mushroom or chicken ) onions, sour cream, water, spices (garlic, basil,pepper and little salt).

Boiled pasta, onions sauteed first, soup, water, seasonings, chicken cut-up or shredded, water cooked up and sour cream stirred in at the end with a little white wine or worchestershire.

Now I boil pasta, brown sliced onions in butter ( can also add fresh mushrooms with onions or add a can of mushrooms drained later), add flour and brown a little to make a roux ( butter and flour) stir in low sodium chicken broth, seasonings, white wine or worchestershire, add chicken stir until heated through turn off heat add sour cream and stir in cooked pasta or rice and serve with salad and bread. Always a big hit here at home.
