This soup is perfection! I did make a few alterations, and it turned out perfectly. I used yellow onion instead of red. I do not have a mill, so I blended the soup and passed it through a fine mesh strainer. I waited to add the cream until after straining the soup. I also held off on seasoning until the end. This cheesy risotto is one you must try! It's creamy and rich, with a tangy, salty kick from the cheeses.
