These have an excellent flavor, but 15 minutes?? No. I took them out at 25 minutes, and they were still completely gooey. I would suggest cutting back on the moisture, by reducing the applesauce and/or soy milk and increasing the baking time substantially. Next time, I would also double the lemon zest in the cupcakes to counter the vanilla. I will"
