This turned out fantastic! The only thing I did different was brown the pearl onions along with the carrots and sliced onions, then removed them. I just added the browned pearl onions back in when it was time to add the mushrooms. I also didn't like picking out all the bones and skin while eating. I may try boneless thighs only next time for convenience...

Reviewed Baked Acorn Squash Filled with Italian Sausage and Rigatoni Pasta

I was actually quite impressed with this recipe. I really didn't think that it would taste as good as it did. The squash flavor went really nicely with the spicy italian sausage. I used Orzo pasta because that is what I had, and it turned out really well. Definitely will make this again!
