I am married to one of the pickiest eaters around- no peppers and no chunks of tomatoes. So to spice this up a notch I substituted a 15 oz. jar of Mild Salsa for one of the cans of diced tomatoes. I put the remaining can of diced tomatoes and the salsa in the blender to eliminated any evidence of peppers/tomatoes. He asked for a second serving.""

Delicious. Cut Agave to 2T and increased the lime juice to 1/4 cup.
Second time I made this I used edamame in place of frozen peas. Poured most of dressing over all while still warm. Dressed salad with remainder at serving time.""

Reviewed Arugula, Watermelon and Feta Salad

Finding FRESH MINT in VT in the winter was a bit of a challange. What little bit I was able to purchase didn't look like it would add anthing to the look of the salad. So I added it to the dressing by putting all of the ingredients in the blender. My company raved about the dressing and the salad.
