"In response to those who have had trouble with the recipe, it's probably not Alton it's you! lol This is my chocolate chip cookies base recipe, I tweek it a little, but the recipe is great as is. First off, if they are spreading too much and therefor browning too much on the bottom and remain a little raw in the certain, you are probably not using bread flour. The recipe has a bit more liquid which is why the bread flour helps with that. Personally, I use AP and it works fine, but you have to know your dough and the right texture before baking. Too thin add more flour and chill, too thick/cakey add more milk, or like what I do, add a tablespoon or so of honey, maple syrup, or molasses.
