My Activity

Reviewed Roasted Butternut Squash Pastina Served in a Pumpkin

"Very yummy! For the roasted squash, I used dark brown sugar instead of granulated sugar and molasses (which I don't have on hand). It took 35 minutes to roast instead of 20. Used dried thyme instead of fresh. Still turned out great! Didn't use the pumpkin shell.
Twist: my partner doesn't like squash, so I added the cheese first, and put some of the thick pasta-soup into some veggie broth. Then I added the squash puree for myself. "

Reviewed Cuban Pork Chops with Mojo

"*Did not make mojo
Made it with 5 thin cut, boneless pork chops, so I reduced the marinade by about half. I used a little less lime due to other reviews saying it was too sour. I tend to overcook pork chops, but these came out moist! I imagine it tastes even better with the mojo; I was being lazy and didn't make it. Ate it with creamed green chili rice and steamed cauliflower.

Reviewed Creamed Green Chili Rice

"The creamed part seemed odd to me, but it looked good on the show, plus I love poblanos, scallions, and cilantro. I forgot about reducing the cream, so I just added less because 1 1/2 cups probably would have made it too mushy. Turned out absolutely delicious! I was also surprised it went so well with the honey soy pork chops from the same episode. I can tell it can go well with many other dishes that I enjoy.
