"This was my first time making biscotti. I always thought it would be difficult and time consuming. NOPE! It was very easy. One thing I tweaked was the cherries. I chopped them up to make them smaller and easier to eat. I left off the sugar on top, and they came out great. Actually, the next time I make this recipe I will cut the sugar in the actual recipe in half. I found them to be too sweet for a biscotti. Over all the entire family gobbled them up. I enjoyed them with a good soak in my coffee.

"Overall we liked the cookie, but we were disappointed that you could only taste the cake mix we used. You couldnt taste the cream cheese or butter. Maybe next time we will try another cake mix. We made her Gooey Butter Cake and gave it a 5 star. The cookie definately holds true to chocolate "gooey". They definately had a wonderful gooeyness!

"If you love lemon, this is your cookie. We love lemon so much we added extra lemon zest to both the dough and the icing. The lemon flavor is wonderfully paired with the lite flavor of the ricotta. Great combination. However, I would definately use parchment paper. I didnt have any on my first two batches and found it hard to remove from my lightly greased pan. The cookie is more cake like when cooked. The kids gobbled these up and asked for more.
