Reviewed Balsamic Chocolate Truffles

The ganache was way too wet - either too much cream, or not enough chocolate. The only way to get these to set up after rolling them in cocoa (or in my case, finely chopped pecans) is to leave them in the refrigerator. And while I do like dark chocolate, these could have benefitted from a little sugar. I won't be making them again.
