Followed recipe, except I used Hershey's semi-sweet chips. Good, but not all that pumpkin...y. Would agree with others to double the spices. Baked in only 12 minutes to a nice golden brown color. Makes a lot of cookies. I, myself, am not a huge fan of cakey cookies, so I probably won't make again."

Followed recipe exactly....these are DELICIOUS, comforting and best of all EASY to make. Friends and my 19 yr. old daughter loved them. Will be making these often. Nice change from mashed potatoes."

Really nice flavors, healthy, and so easy to make. Didn't have arugula so, I just used spinach. No capers....just not a fan of them. Will definitely make this again using the arugula and might try it adding shrimp. "

Just made these and loved them......soooo good!! Didn't change a thing, except I didn't make the topping. Although, I would love it just the same - was in a bit of a hurry. Just topped with raspberries and maple syrup. Delish! Definitely keeping this one.

Love this recipe! It's so easy to make, healthy and moist. Have made this a few times now. The first time, I prepared it ahead and baked it in the oven of our cabin during winter camping along with cornbread. It was perfect! Comforting and delicious. Thanks Ellie for a fabulous recipe!""

Reviewed Curried Cauliflower with Chick Peas and Tomatoes

Wonderful, Easy, and Healthy! Used only 1 can of chickpeas, oil instead of ghee, and regular store-bought curry powder PLUS 1 Tbsp. of Hot Curry Paste I had on hand for added kick.
I usually pass on cauliflower as a vegetable in my regular diet because of it being so boring and bland and not knowing what to do with it that isn't too fattening...
