Reviewed Cucumber-Lychee Gazpacho with Feta Crostini

"Refreshing! The texture of the gazpacho is a bit chunky from the almonds (but I used slivered almonds and that may be why, which gave it a nice "bite". Great for a summer meal. Lychees did not make it overly sweet, just gave it added level of flavor. The crustini: to die for! "
