I have made this a few times and found that the addition of about 2-3 ounces of cream cheese creates a nice, smooth sauce. It does tend to dry out a bit once it gets into the tomato and cooked on the grill or in the oven - you may want to add extra cooking liquid. I also enjoy this without putting it into the tomato - just diced up some tomatoes"
