Remember - this dish is made with beef ribs, not pork! I guess I was lucky to get non-fatty beef ribs, and it turned out awesome! Mexican barbeque at its best! This is an awesome dish! I made it today in the slow cooker for tomorrow's game. I added about 1/2 tsp oregano and cut the meat in half (there's only two of us).
