Reviewed Chipotle Cashew Chicken with Brown Rice

"This was very tasty. At first bite, I didn't know what to think. Cumin mixed with soy sauce and maple syrup was definitely different, but after a few bites I was comfortable with it and thought it was quite tasty. The only change I made was to use quinoa instead of brown rice. I would make it again, although I may cut back a bit on the Cumin. ""

Reviewed Chicken Satay with Peanut Sauce

"I thought the chicken was really tasty. The peanut sauce was very thick and I made a few tweeks as other reviewers suggested - added a splash of tamari, some rice wine vinegar, and coconut oil. It went well with the chicken. Overall I would make the chicken again but would look for a different satay sauce.""

Reviewed Sweet Potato Ice Cream

"I did not like this recipe. It was not creamy like many ice creams, but more crystallized (maybe the alcohol in the beer caused this by raising the freezing point?) I also couldn't find canned sweet potatoes, so i baked my own, and pureed them in a blender. Maybe this is where I went wrong, but I will not be making this again."

Reviewed Slow Cooker Chipotle-Lime Chicken Thighs Jamaican Rice and Peas

"I made this recipe almost exactly as written. Used brown rice instead of white rice, and cooked the whole rice dish in a rice cooker. Also, i only had a 1.3 lb package of boneless, skinless chicken thighs, so I used those, but kept the amounts of sauce and veggies the same. This amount of chicken was perfect for the recipe, as it fed my husband and I for 2 nights. I also added a little extra chipotle pepper, and it wasn't quite spicy enough for me, so next time I would add more. I can not imagine the recipe with sugar, and i'm not sure why some other reviewers felt it needed that. I will definitely make this again."
