This has become a regular recipe for me. So nice to have a tasty vegetarian dish. Sometimes I am lazy and use a prepared crust. Everyone loves it. Lunch, brunch, light dinner, or cut up small as an appetizer! "

This an absolute winner. About as tasty and healthy as you can get. I have shared it, and had it as a snack, a side, and a meal! Really easy!
