I liked how light this taboulleh was. I deviated a little and only used one bunch of parsley and only had dried mint flakes on hand. Even so, it was really good. Had I put in the rest of the parsley, I think it would have been a bit overkill."

Ever since I began making this potato salad last year, I am now in charge of potato salad if it is ever wanted at a function. It is so flavorful and tangy. The buttermilk adds such a creaminess.
