I like buttered popcorn and so thought, "Why pop with peanut oil and then add butter?"

I substitute 3 tablespoons of ghee for the peanut oil. The result? Light, fluffy, buttery, perfectly seasoned and non-greasy popcorn. Alton explains how to make ghee in the Good Eats episode Crustacean Nation III.

Yes, the bowl will scorch if you leave it on the burner too long. The trick is to remove the bowl from the heat when the corn popping slows but BEFORE the popping stops entirely! Just a bit of finesse results in perfectly popped corn. :)"
