I road tested this on my two oldest teens today and they both loved it. I think I should have added more milk as it was very thick but still tasty. Also becareful when salting and taste as you add so not to make it too salty."

This recipe was great. I had left over pork loin roast and so cooked for 1 hour vs. 3 hours. My kids are picky eaters so I separated the pork from the mixture after cooking and puree'd it to disguise the sauteed vegtables. This Rib Roast was absolutely the best ever. I had a 9lb roast so wasn't sure on exact time but accidentally left in 10 minutes longer initially and then when turning back on cooked about another 30 as the temp gauge (which is old) said it was 120 degrees. This was a hit with my family and friends. Modified EVO quantity with ricotta and it turned out delicious. Couldn't find the Caciacavallo and substituted with Asagio. It did take more than 30 minutes to prepare but no worry as it was fun preparing it.
