"So much flavor and heat! I toned it down and only put 1/2 teaspoon of red pepper flakes & 3 tablespoons of Emeril's Esssence and it still had a plenty of heat. "I loved this recipe! It was amazing! I used pecans instead of the walnuts since I don't care for their taste. I only used one stick of butter in the icing as well and it was perfect. The first time I made this cake I didn't use the baby food and just increased the shredded carrots to 3 cups. Either way it works great! My house smells amazing"

"This recipe is awesome! I made it for dinner and it's almost a desert. The only thing I did different was increase the cinnamon to 1 teaspoon, used only 1 stick of butter in the topping and diced an apple in the topping.
