This is a great recipe for a number of reasons. First, it is very flavorful and cooking everything in the slow cooker makes the flavors marry really well and cooks the pork perfectly. Second, this is a very easy slow-cooker recipe. Cut a couple things in chunks, throw in the cooker, and let it go. It's delicious!"

When I tasted the cupcake without all the other components I was a little disappointed, but considering the sweetness of the curd and icing, a subtle cupcake flavor was important. These cupcakes got rave reviews at work and I would definitely make them again. (I, too, had A LOT of curd left over. I do agree that you can cut the curd in half. I"
