My favorite truffle mix (makes 60)way less messy
1 8oz cream cheese (sounds odd but makes amazing truffles)
3 cups sifted powder sugar(sift then measure out 3 cups sifted)
3 cups bitter sweet chocolate melted over double boiler

I made several batches in one batch in place of brandy I reduced 1/2 cup of orange juice down to 1/4 cup over the stove grated in the zest of one orange allowed to cool a bit then stirred it into the mix in place of brandy.
