Poached chicken has been a favorite in this house for decades, first learned from Julia Child. It's routinely made for chicken salad, adding to other salads, soups, stews, sometimes simply cold with a bit of horseradish sauce or mustard. This recipe does the job nicely and using a much simpler method than Julia ;)

The "zip" or bite in mustard depends a lot on freshness. Fresh seeds, freshly ground are much zippier than that made from older mustard seed. Keep that in mind and try to get fresh (try an Indian or Asian market) mustard seed. Also decreasing the amount of wine and increasing the vinegar puts more bite in the final product.

Fabulous following the recipe and agree with others that this may be one of the best cookies ever... but if you substitute leftover sugar from candying ginger for the sugar in this recipe, it takes ginger to another level. Try it. "
