“The "zip" or bite in mustard depends a lot on freshness. Fresh seeds, freshly ground are much zippier than that made from older mustard seed. Keep that in mind and try to get fresh (try an Indian or Asian market) mustard seed. Also decreasing the amount of wine and increasing the vinegar puts more bite in the final product.
