Reviewed Sausage Balls

"Just popped these out of the oven a short bit ago. They turned out great using what the recipe called for on this site. I watched her short video clip on them and they definitely take more than a few minutes to mix. You have to get some good hand action in that bowl. My "dough" ended up not being crumbly at all. I was able to easily form it into balls. Tried one right out of the oven and it tasted pretty much like a sausage biscuit. Very tasty and I just like they way the look all stacked on a platter, nice and golden!"

Reviewed Chicken and Black Bean Enchiladas with Gooey Jack Cheese

"Am just finishing eating this for the time right now as I type this! :) Used some suggestions below. I spread a very thin layer of sour cream on the shells and threw in some cheese before rolling them up and then used enchilada sauce, red (mild), on the bottom of the baker and then on top of the enchiladas. I did use a lot more cheese than what the recipe called for, but I use a lot more cheese on any recipe that calls for it. So I did very little "tweaking" of the recipe and they turned out great!

Reviewed Mexican Lasagna

"I've made this dish a few times now and it has turned out really well every time. I keep to the recipe with the exception of adding quite a bit more cheese and I add sliced olives on top along with the scallions because I like black olives and, well, it looks very pretty! I have shreeded cheese, sour cream and taco sauce on the side for anyone who wants it and it has been a hit every time!

Reviewed Bacon Wrapped Blue Cheese Stuffed Chicken, Green Beans and Smashed Potatoes with Green Onions

"Made the whole meal today and it was great. The chicken was simple to make and tasted great. I had to increase the oven time substantially as the breasts I got were huge. Also had to use way more than 1 piece of bacone per breast because of that. Next time I will halve them or try and find smaller pieces. The smashed potatoes and green been dish were nice complements to the chicken.
