This was awesome and will become a Christmas tradition. I echo the recent comments about timing - we indeed eat an hour later, and I had to crank the oven back up to get the internal temperature to rise. I took the roast out at 110 degrees and the resting time brought it up to a perfect 125. Oven and probe type thermometers are absolutely critical...

I've made these a few times and they never fail to be a showstopper.. They are ideal for Christmas dinner as you should make them the day before and then reheat next day - and as Ree says they are even better that way..!

Tested this three different times will a few of the tweaks mentioned here and just didn't have any luck... I guessing my local produce section just wasn't having a good brussels sprout week...
