"this was the first recipe I tried from Ina and it was DELICIOUS! I made mine mini cakes and everyone LOVED them. They came out moist and flavorful and tasted just like fall! Perfect for the holidays. I made the frosting too, simple and not too overpowering. The perfect compliment to the cake.
If you don't have a fresh pineapple you can try what I did. I just used a third of canned crushed pineapples, drained them, and added them to the wet ingredients. I tried to get a fresh pineapple but the boyfriend had already gone to the store twice today and he refused to go back to get me a pineapple jajaja.
