I LOVE Alton Brown, but I've made this recipe twice and it hasn't really produced a "chewy" cookie either time. I've used the exact measurements, parchment paper, chilled the dough, and rotated baking sheets in the oven. Every time I've had to turn down the oven as these cookies burn on the bottom at 375F.
