Reviewed Eggplant Casserole

“My family loved it and eggplant is not generally their favorite vegetable. The casserole is simple but so "comfort" food style yummy and homey. I also followed the recommendations for a reduction in breadcrumbs (I actually used panko) and 1% milk which worked just fine. This will be served again very soon!

“I love gingerbread, and I love FN's Cupcake Wars, so I couldn't resist trying this recipe. I was a bit skeptical about the Zinfandel frosting, but it sounded too unique not to try.
