I love Emeril's recipes. This one was easy. I believe it called for far to much celery and green pepper. Both veggies can be so overpowering and I rarely ever use green pepper because of that. Good basic recipe. I did change it a bit. I used leeks instead of garlic as the leeks are milder which I prefer. I used lime juice and I added fresh parsley. Very Good. "

I thought it was quite tasty. I like others, cut back on the oil.
I did not want the extra calories and I like the texture of it like this. I used leeks instead of garlic. I increased the lemon and added cilantro. Simple, easy, healthy and flavorful. Great along side eggs in the morning, nice snack and good with fish too. "
