The Latin recipes on many tv shows, not just Food Network, are rarely what any Latino grew up on. I think some chefs just add what they prefer, like Bobby Flay adding heat to almost any dish.

Absolutely correct Betsy. I did a double take when I saw "ripe plantains", you cannot make tostones from ripe plantains. But then sadly all the Cuban/Puerto Rican recipes on tv cooking shows add ingredients that you wouldn't find in any Puerto Rican or Cuban home.

I hear you. It was good enough with some changes I made but not at all typically CUBAN in flavor. Never find this in Miami for sure.

Agreed. I used chicken stock instead of water, used 1/2 can tomato sauce instead of chopped tomatoes (as I was taught by a Cuban mami) and some sugar to balance out the vinegar. I agree that the addition of salt has to be "to taste" and it was left out in the recipe.

Yes, as it is you need to balance out the vinegar with sugar but that's not included in the recipe.

Good with some changes: NO cilantro, no ground cloves (never saw it used in Puerto Rican or Cuban versions of arroz con pollo), added beer to the chicken stock measurement and used only dark meat chicken. With those changes it was better.

Ricotta, granulated sugar & vanilla, all to taste, mix it and it is cannoli cream despite what anyone says, been eating cannoli cream all my life and now that I live where I can't get cannoli, I found this method and it is cannoli cream! I add chocolate chips, it's perfect.

I changed the rice/liquid ratio to 2 Cups Rice/ FOUR cups liquid. Also added cumin for a more Cuban flavor, brown meat chicken (never had Cuban/Puerto Rican style arroz con pollo with white meat chicken) and eliminated the raisins (ok in Picadillo but not arroz con pollo). With those changes it was good.

BUT: We drained the canned tomatoes & chilies because I didn't think it needed the extra liquid, used less than 6 cups of stock, no bayleaf (IMO it doesn't add a thing) and instead added 1/2 tsp. ground cumin to give it more of a Cuban kick."
