Reviewed Pita Stuffed with Tabbouleh and Shards of Feta

"WARNING - I made this for lunch anticipating leftovers for tomorrow and there will be no leftovers. I can't stop eating it - even without the pita and cheese. I DID make one change -- I didn't have any bulgur wheat and used quinoa instead. "

Reviewed Couscous-Stuffed Peppers with Basil Sauce

"Delicious! I made a few changes based on items I had on hand.
- Instead of couscous I used quinoa but prepared it the same as the couscous instructions.
- I used dried cranberries instead of currants.
- And instead of the creme fraiche I used half sour cream, half 2% greek yogurt - I had to add a little more water and a little more sugar but it was great!
Finally, while ALL of the peppers were tasty, I actually preferred the yellow and orange ones - the red pepper flavor was just a little sweet."

About Me

I had never cooked/baked/made a food dish in my life other than Lean Cuisines. I had never even NOTICED the food network while flipping through the channels. Then I got pregnant and instead of incessantly cleaning my house, I attacked the kitchen. I LOVE all the simple recipes and am so proud whenever a dish turns out correctly.  In addition to my new found culinary skills, I am also a writer and publishing my first book in the summer of 2011.
