This was OUTSTANDING!!! I had fried eggplant left (flour/egg dip) from the day before, used it to make this recipe. So good, can't wait to have the leftovers this evening! I think having fresh basil is critical to the recipe, but the dry thyme worked fine. Fresh grated parmesan is also important vs. canned. BTW, I used stewed tomatoes as that"
